Using our Olive Oil Trio, we have created an easy chicken dinner complete with roasted carrots and potatoes.  Even better?  It all gets roasted at 350 in the oven at the same time. Simple to make and even easier to prepare.

Not only does this recipe give you a roast chicken loaded with flavor… it delivers crispy skin, juicy meat, and two perfect sides that make for even better leftovers.

Ingredients:

(Serves 4)

Roasted Chicken:

  • ¼ cup Kosterina Greek Herb and Lemon Oil
  • 1 ½ lb whole chicken, innards removed
  • 3 lemons, divided
  • 1 small onion, peeled and halved
  • 1 T kosher salt
  • 1 T fresh cracked pepper
  • 2 T dried thyme
  • 2 T dried oregano

Garlic Roasted Potatoes:

  • 1 lb baby potatoes
  • 3 T Kosterina Garlic Oil
  • 1 T kosher salt
  • 1 T fresh cracked pepper
  • 1 T fresh dill, for garnish 

Orange Glazed Carrots:

  • 1 lb multi-colored carrots
  • 1 orange, zested and juiced
  • 3 T Kosterina Original Extra Virgin Olive Oil
  • 1 T kosher salt
  • 1 T fresh cracked pepper

Directions:

 Roasted Chicken:

  1. Preheat oven to 350.
  2. In a roasting pan, drizzle 1 T of the oil to coat.
  3. Add the chicken to the pan and stuff with one lemon, halved and onion.
  4. Drizzle the entire chicken generously with the rest of the oil.
  5. Squeeze the juice of two lemons all over the chicken.
  6. Sprinkle the chicken with salt, pepper, thyme and oregano
  7. Place in the oven for 1 hour to 1 hour and 20 minutes.  Begin checking at 1 hour mark for doneness.
  8. Once the chicken is in the oven, make the potatoes.

Garlic Roasted Potatoes:

  1. Place potatoes in a pot and cover with cold water. Bring to a boil.
  2. Boil for 7 minutes, until just fork tender.
  3. Drizzle 1 T of garlic oil on a baking sheet.
  4. Add drained potatoes and drizzle the remaining oil on top, shimmy pan coat the potatoes.
  5. Sprinkle with salt and pepper.
  6. Add to the oven after the chicken has been roasting for 30 minutes.  Cook for 45 minutes.
  7. Prepare the carrots.

Orange Glazed Carrots:

  1. Peel carrots and place on a baking sheet
  2. Add orange juice, zest and oil, shimmy pan to coat the carrots.
  3. Sprinkle with salt and pepper.
  4. Place in the oven and roast for the last 30 minutes of cook time on the chicken.
