Pre-heat oven to 350 degrees.

Add all dry ingredients to a bowl (oats, flour, almonds, and cinnamon) and mix to combine. Add in EVOO, Crushed Fruit Vinegar, Orange Juice, and Maple Syrup and mix until well combined.

On a parchment lined baking sheet, use a cookie scoop or spoon to form each cookie on the baking sheet. Should make about 12 cookies.

Create a small dent in each cookie using the back of a ½ teaspoon measuring spoon. Add a dollop of jam into each dent. Bake at 350 degrees for 12 minutes.
