Enjoy this sophisticated meal without needing hours of prep and clean-up.  This one-pan Salmon & Broccoli Bake uses our Kosterina Organic Everyday EVOO to create beautifully flaky salmon fillets and crispy broccoli bites.  A delicious & elegant meal that takes minimal time and effort.

Ingredients

  • 2 Salmon Fillets, about 1 pound
  • 2 Cups Broccoli florets 
  • 5 tablespoons (total) of Kosterina Everyday EVOO 
  • 7 Lemon Slices about ¼ inch thick, 3 slices cut in half to place under salmon
  • 1 teaspoon Minced Garlic
  • Broccoli Seasoning:
  • ¼ teaspoon Garlic Powder
  • ⅛ teaspoon Onion Powder
  • ¼ teaspoon Salt
  • Pepper to taste
  • 3 Tablespoons Kosterina Everyday EVOO
  • 1 Teaspoon Minced Garlic
  • ½ teaspoon Paprika
  • 1/4 teaspoon Onion Powder
  • ¼ teaspoon Salt
  • Pepper to taste

Directions

  • Preheat Oven to 450 degrees.
  • Add Parchment Paper to a sheet pan.  Drizzle Kosterina Everyday EVOO over parchment paper before placing Broccoli on the pan.  Drizzle about 1 tablespoon of EVOO on the Broccoli, followed by Garlic Powder, Onion Powder, Salt, and Pepper.  Toss Broccoli around the pan to make sure all are coated. Push Broccoli to the side of the pan.
  • In the middle of the pan, place half slices of lemon down before topping the slices with Salmon filets (appx. 3 half slices on the bottom of each filet). 
  • Make EVOO Spice Mixture with Everyday EVOO, Paprika, Garlic, Onion Powder, Salt, and Pepper.  Coat Salmon with EVOO Spice Mixture and top with 2 Lemon Slices on each Fillet.
  • Bake at 450 degrees for 20 minutes, until Salmon flakes easily with a fork.  Broccoli should be crispy.  Note: you can add broccoli halfway through baking if you prefer it less crispy.
