Ingredients

  • 1 cup salted pistachios, finely chopped 
  • 1 tsp kosher salt
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder 
  • 1 1/2 pounds fresh green beans, washed and trimmed 
  • 1/4 cup Kosterina Everyday Extra Virgin Olive Oil
  • 8 oz feta cheese
  • 1 cup full fat greek yogurt
  • 1 lemon, juiced 
  • 3 tbsp Kosterina Garlic Extra Virgin Olive Oil 
  • 1/2 cup pomegranate arils for garnish 

Instructions

    Bring a large pot of water to a boil and add the green beans. Cook for 4 minutes, then remove from the water and add to a bowl of ice water to cool.

    Add the pistachios, salt, cumin, garlic powder, and onion powder to a small bowl and mix well. Reserve 1/4 cup of the mixture for garnish.

    Heat a skillet over low heat, then add the Kosterina Everyday Olive Oil. Add the remaining pistachio mixture and the green beans and cook for about 5 minutes.

    Meanwhile, add the feta, yogurt, lemon, and Kosterina Garlic Olive Oil to a blender or food processor. Blend until smooth and fluffy.

    Spread the whipped feta onto a serving platter. Place the green beans on top and sprinkle with the remaining pistachio mixture and pomegranate seeds.
