These sweet potato wraps are the perfect gluten-free alternative, providing even more flavor than the standard wrap! Super quick & easy, made without any inflammatory ingredients, you will want to put everything in these wraps.

Ingredients

  • 2 sweet potatoes or purple sweet potatoes (about 2 cups), baked and cooled
  • 1 cup gluten-free all purpose flour
  • ½ tsp kosher salt
  • ¼ cup Kosterina Everyday Extra Virgin Olive Oil, plus more as needed

    Scoop the flesh from the sweet potatoes and add to a medium bowl. Use a fork or whisk to mash well, then mix in the flour and salt. Use your hands to knead the mixture until a smooth dough forms.

    Shape the dough into a ball, then cut into 6-8 equal pieces, depending on how large you’d like the tortillas to be. Shape each piece into a ball.

    On a floured surface, roll out each ball to form a tortilla about ⅛ inch thick.

    Heat a pan to medium heat, then add enough Kosterina Everyday Extra Virgin Olive Oil to coat the bottom of the pan. Add a tortilla to the pan and cook for 1-2 minutes until large bubbles begin to form and the tortilla is turning lightly golden brown on the bottom, then flip and cook for about 1 minute on the other side. Remove and repeat with the rest of the tortillas, adding more olive oil as needed.
