One Skillet Tangerine-Marinated Chicken

Ingredients
For the Marinade:
- 3 Tbsp Kosterina Crushed Tangerine Vinegar
- 3 Tbsp Kosterina Everyday Organic Extra Virgin Olive Oil
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp fresh thyme
- Zest of 1 orange
- 4 garlic cloves, minced
- Juice of half an orange
For the Chicken:
- 4 bone-in chicken thighs
- 1 orange, sliced
- 2 shallots, chopped
- 1/2 cup pitted Castelvetrano olives
- A handful of thyme sprigs
Directions
For the Marinade:
- Put all marinade ingredients in a bowl and whisk to combine
For the Chicken:
- Pat chicken thighs dry and lightly season with salt
- Pour the marinade over chicken thighs, combine and let rest for 30 mins
- Preheat oven to 400 degrees F
- In a cast iron skillet, on medium-high, add 1 Tbsp Kosterina Everyday Extra Virgin Olive Oil
- Once hot, sear chicken thighs, skin side down until golden brown & slightly crispy, about 8 mins
- Flip and nestle in orange slices, shallots, olives & thyme sprigs around the chicken thighs
- Place the cast iron skillet in the oven and cook for 10 mins
- Remove and baste chicken in all the delicious fat drippings
- Add back to the oven and cook for 10 more minutes or until chicken is cooked through
