One Skillet Tangerine-Marinated Chicken

Ingredients

For the Marinade:

  • 3 Tbsp Kosterina Crushed Tangerine Vinegar 
  • 3 Tbsp Kosterina Everyday Organic Extra Virgin Olive Oil  
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp fresh thyme
  • Zest of  1 orange 
  • 4 garlic cloves, minced
  • Juice of half an orange

For the Chicken:

  • 4 bone-in chicken thighs 
  • 1 orange, sliced 
  • 2 shallots, chopped
  • 1/2 cup pitted Castelvetrano olives  
  • A handful of thyme sprigs 

Directions

For the Marinade:

  • Put all marinade ingredients in a bowl and whisk to combine

For the Chicken:

  • Pat chicken thighs dry and lightly season with salt
  • Pour the marinade over chicken thighs, combine and let rest for 30 mins
  • Preheat oven to 400 degrees F
  • In a cast iron skillet, on medium-high, add 1 Tbsp Kosterina Everyday Extra Virgin Olive Oil  
  • Once hot, sear chicken thighs, skin side down until golden brown & slightly crispy, about 8 mins
  • Flip and nestle in orange slices, shallots, olives & thyme sprigs around the chicken thighs
  • Place the cast iron skillet in the oven and cook for 10 mins 
  • Remove and baste chicken in all the delicious fat drippings
  • Add back to the oven and cook for 10 more minutes or until chicken is cooked through
