We are so excited to be partnering with our friends at Oishii for this delicious treat of a recipe! Made perfectly-sweet with a bright taste, these crisps are exactly what we need when the weather begins to get warmer and sun starts to shine. Enjoy with a scoop of your favorite vanilla ice cream, drizzled with our Kosterina Original Extra Virgin Olive Oil.

Ingredients

For the Filling

  • 2 cups Oishii Omakase or Koyo Berries, sliced
  • 2 tsp Kosterina Strawberry Crushed Fruit Vinegar 
  • 1 tbsp arrowroot powder (or cornstarch)
  • 1 tsp vanilla extract
  • 1 tbsp coconut sugar

For the Topping

  • ½ cup rolled oats (certified gluten-free if needed) 
  • ½ cup almond flour 
  • 3 tbsp coconut sugar
  • ¼ tsp cinnamon 
  • Pinch of salt 
  • 3 tbsp Kosterina Everyday Extra Virgin Olive Oil
  • 3 tbsp almond butter 
  • ½ tsp vanilla

Other Ingredients

  • Vanilla ice cream
  • Kosterina Original Extra Virgin Olive Oil
  • Sea salt 
  • Oishii Berries for garnish 

Instructions

    Preheat the oven to 350F and grease two oven-safe, 7 oz ramekins with Kosterina Everyday Extra Virgin Olive Oil.

    To a medium bowl, add the sliced Oishii Berries, Kosterina Strawberry Crushed Fruit Vinegar, arrowroot powder or cornstarch, vanilla, and coconut sugar. Mix well to combine, then divide in half into the two ramekins. Set aside while preparing the crumble topping.

    In a medium bowl, combine the oats, almond flour, coconut sugar, cinnamon, and salt and mix well. Add the Kosterina Everyday Extra Virgin Olive Oil, almond butter, and vanilla, and mix well until crumbly. Sprinkle the topping evenly on top of the strawberries in the two ramekins.

    Bake for 30-35 minutes until the crumble topping is golden brown and the fruit is bubbly and let cool for 10-15 minutes.

    To serve, top each ramekin with a scoop of vanilla ice cream. Drizzle the ice cream with Kosterina Original Extra Virgin Olive Oil, sprinkle with sea salt, and garnish the strawberry crisps with more Oishii Berries.
