Ingredients

  • 6 large or 7 medium ears of corn
  • 1/4 cup chopped red onion
  • 2 tablespoons Kosterina Greek Herb & Lemon Olive Oil
  • 1/2 cup Feta, crumbled
  • 2 tbsps of Kosterina Cucumber Lemon Balsamic Vinegar
  • Chopped fresh herbs (mint, cilantro or parsley)
  • 1/4 teaspoon kosher salt
  • black pepper, to taste

    Set the grill to medium-high

    Husk the corn

    Grill until corn is nicely charred (around 10 minutes)

    Transfer to a cutting board and cut the kernels off the cobb

    Toss the corn, Kosterina Cucumber Lemon Balsamic Vinegar, Kosterina Greek Herb & Lemon Olive Oil, red onion, feta, fresh herbs, salt, and pepper in a medium salad bowl
