Gigantes plaki is a cozy Greek classic made with tender giant beans baked in a rich tomato sauce. Using Simpli Gigante beans gives it an extra-creamy, authentic texture, while the “plaki” method roasts everything with tomatoes, veggies, and plenty of olive oil. Ingredients

Beans:

  • 1 cup Simpli Gigante Beans, soaked in water overnight 
  • 2 cups filtered water
  • 2 sprigs thyme 
  • 1 bay leaf 
  • 1 clove garlic 
  • 1 tsp salt

Other ingredients: 

  • ¼ cup Kosterina Everyday Olive Oil
  • 1 yellow onion, chopped
  • 2 large carrots, chopped 
  • 2 stalks celery, chopped 
  • 4 garlic cloves, minced
  • 1 tbsp fresh thyme
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes 
  • 1 tsp salt
  • 2 (15 oz) cans diced tomatoes in juice
  • 2 tbsp Kosterina Spicy Red Pepper Olive Oil
  • ¼ cup feta cheese, crumbled
  • Chopped parsley for garnish 
  • Gluten free bread or crackers

Instructions

    To a saucepan, add Simpli gigante beans, water, thyme, bay leaf, garlic, and salt. Bring the water to a boil, then cover and simmer on low heat for 65-80 minutes. When the beans are done, remove from the heat and set aside.

    Preheat oven to 400 F.

    To a dutch oven or cast iron skillet over medium heat, add the olive oil, onion, carrots, and celery. Saute until softened, about 5-7 minutes, then stir in the garlic, thyme, oregano, red pepper flakes, and salt. Cook for another minute.

    Add the diced tomatoes, cooked beans, and water. Bring to a low boil and cook for 5 minutes. Transfer the mixture to the oven and bake until lightly golden brown.

    Remove from the oven and sprinkle with crumbled feta and parsley and drizzle with Kosterina Spicy Red Pepper Olive Oil. Serve with gluten-free bread or crackers.
