Ingredients

For the Salad

  • 1 pint cherry or grape tomatoes, sliced in half
  • 1 seedless cucumber, thinly sliced
  • 1/2 medium onion, thinly sliced

For the Dressing

  • 1/2 cup Kosterina Original Extra Virgin Olive Oil
  • 1/4 cup Kosterina Cucumber Lemon Balsamic Vinegar
  • 1 tbsp fresh lemon juice
  • 1/2 tsp honey 
  • 1 tsp Italian seasoning 
  • 1 tbsp minced garlic 
  • 1 tsp kosher salt 
  • 1/2 tsp cracked pepper

Instructions

    Prep the tomatoes, cucumbers, and onions and add to a large bowl. Set aside.

    To a jar or liquid measuring cup, add all ingredients for the dressing and mix well. Pour over the vegetables and toss well to coat.
