This isn’t your average Caesar - we’ve given the classic a Mediterranean glow-up with Brami lupini pasta, crispy roasted lupini “croutons,” and a creamy Greek yogurt Caesar made with Kosterina Garlic Olive Oil. Protein-packed, crunchy, and irresistibly creamy - just the way we like it.

Ingredients

For the Salad:

  • 8 oz Brami pasta
  • 1 cup Brami Lupini beans, rinsed and dried (Mediterranean Medley)
  • 1 tbsp Kosterina Greek Herb & Lemon olive oil
  • 4 cups Romaine lettuce, chopped
  • 1/2 cup Parmesan cheese, shaved
  • 1/4 cup cherry tomatoes, halved

For the Greek Yogurt Caesar Dressing:

  • 1/2 cup plain Greek yogurt
  • 2 tbsp Kosterina Garlic olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 2 tbsp Parmesan cheese, grated
  • 1 tsp anchovy paste (optional)
  • 1 tsp Worcestershire sauce
  • Salt and black pepper to taste

Instructions

    Prepare the Pasta: Cook the Brami pasta according to package instructions. Drain, rinse under cold water, and set aside to cool.

    Roast the Lupini Beans: Preheat your oven to 400°F (200°C).

    Toss the dried Lupini beans with a drizzle of Greek Herb & Lemon EVO, salt, and pepper. Spread them on a baking sheet in a single layer.

    Roast for 15–20 minutes, shaking the pan halfway through, until golden and crispy.

    Make the Dressing: In a small bowl, whisk together Greek yogurt, garlic olive oil, lemon juice, Dijon mustard, and Parmesan cheese. Worcestershire sauce, and anchovy paste (if using). Season with salt and pepper to taste. Adjust thickness with a little water if necessary.

    Assemble the Salad: In a large salad bowl, combine the cooled pasta, Romaine lettuce, cherry tomatoes, and Parmesan cheese.

    Drizzle with the Greek yogurt Caesar dressing and toss until evenly coated.

    Finish with Roasted Lupini Beans: Sprinkle the roasted Lupini beans over the top as crunchy "croutons."

    Serve and Enjoy: Serve immediately as a refreshing main dish or chilled for later.
