This avocado bread recipe, inspired by Bobby Parrish, is perfect for sandwiches, a fresh take on avocado “toast,” or topped with cottage cheese, juicy tomato, and a drizzle of our extra-virgin olive oil. It’s easy to make, delicious, and comes together with just a few simple ingredients.

Ingredients

Avocado Bread:

  • 2 ripe avocados
  • 2 eggs
  • 2 cups cheese, grated
  • 1/2 tsp Kosterina Greektown Spice Blend

Toppings:

  • 1 cup cottage cheese
  • 2 tomatoes, sliced
  • Kosterina Original Olive Oil for drizzling
  • Flaky sea salt and pepper

Instructions

    Preheat the oven to 400F and line a baking tray with parchment paper.

    Add the avocados, eggs, cheese, and Kosterina Greektown Spice Blend to a bowl and use a fork to mash everything together.

    Divide the avocado mixture into four even scoops on the baking tray and use a spoon to shape them into circles.

    Bake for about 30 minutes or until golden brown on the top and bottom. Remove from the oven and let cool.

    Top each piece of avocado bread with ¼ cup cottage cheese, a few slices of tomato, a drizzle of Ko terina Original Olive Oil, and sea salt and pepper to taste
