Ingredients

  • 2 cups kale, stems removed and chopped
  • 2 cups spinach
  • 1½ cups organic pulled rotisserie chicken
  • 1 tin Row 7 Badger Flame Beets
  • ½ avocado, sliced
  • ¼ cup feta cheese, crumbled
  • ¼ cup chopped walnuts (lightly toasted if possible)
  • 2–3 tbsp red onion, finely chopped

Creamy Strawberry Balsamic Dressing

  • 1/4 cup red onion (finely chopped)
  • 1½ tablespoons fresh cilantro (chopped)
  • 1/3 cup Kosterina Original Olive Oil
  • 2 tablespoons Kosterina Crushed Strawberry Vinegar
  • 1½ tablespoons Dijon mustard
  • 1 teaspoon salt & pepper

Instructions

    In a large bowl, massage the kale with a drizzle of olive oil and a pinch of salt for 1–2 minutes until softened.

    Add the spinach and toss to combine.

    Layer in the pulled chicken, beets, avocado, feta, walnuts, and red onion.

    In a jar, combine all dressing ingredients and whisk until combined.
