Grilled Zucchini with Tzatziki

This simple grilled zucchini dish is proof that great ingredients don’t need much fuss. Tender zucchini is lightly charred on the grill and served over a bed of cool, creamy tzatziki for a refreshing contrast of flavors and textures. It's an easy yet elevated side dish that lets clean, wholesome ingredients shine - perfect for summer gatherings, weeknight dinners, and everything in between.

Greek Herb & Lemon Olive Oil

Ingredients

  • 3 medium zucchini
  • Kosterina Everyday Olive Oil
  • Salt and pepper, to taste
  • 8 ounces tzatziki
  • 4 ounces feta, crumbled
  • 1-2 tbsp fresh dill 
  • Flaky salt
  • Freshly cracked black pepper 
  • Kosterina Greek Herb + Lemon Olive Oil

Instructions

    Slice the zucchini on a bias into ½” rounds.

    Preheat the grill to 400 degrees Fahrenheit.

    Drizzle the zucchini with the Everyday Olive Oil and brush both sides so they’re evenly coated.

    Once the grill is preheated, grill the zucchini for about 2 minutes per side. Remove from the grill.

    Spread the tzatziki over a serving plate and place the grilled zucchini over the top.

    Garnish with the crumbled feta, a pinch of flaky salt, freshly cracked black pepper, and freshly torn dill.

    Drizzle with a little herb and lemon olive oil and enjoy!
