Grilled Feta Zucchini Turkey Burgers

Topped with creamy tzatziki, peppery arugula, and pickled red onions, each bite is fresh, satisfying, and packed with flavor.This is an easy weeknight dinner you'll be making all summer long.

Ingredients

  • 1 zucchini, grated 
  • 1 pound ground turkey (dark meat preferred) 
  • 1 ½ tbsp freshly minced dill 
  • ¾ cup crumbled feta cheese 
  • ½ tbsp Kosterina Greektown Spice Mix 
  • 2 tbsp Kosterina Everyday EVOO 
  • 6 burger buns 
  • Arugula, to serve 
  • Tzatziki, to serve 
  • Pickled red onions, to serve 

Instructions

    Place the grated zucchini in a fine mesh towel or similar to strain out any excess moisture.

    To a mixing bowl add the turkey, strained grated zucchini, dill, feta, spice mix, and EVOO.

    Use your hands to carefully toss until fully combined, trying to avoid overmixing.

    Divide the mixture into 6 even burger patties.

    Preheat the grill to 375-400 degrees Fahrenheit. Make sure the grill grates are lightly greased.

    Grill the burger patties for about 5 minutes per side or until cooked through. Remove from the grill.

    Toast the burger buns on the grill for about 1 minute until slightly charred.

    To assemble the burger, add a handful of arugula to the bottom of the bun, followed by a turkey burger, a generous dollop of tzatziki, and pickled red onions. Top with the top bun and enjoy!
