A nutritious, hearty, and delicious bowl perfect for the autumn season.  A diverse set of fall flavours are brought together using our Original Extra Virgin Olive Oil and new Apple Cider Balsamic Vinegar. Enjoy!


  • 1 sweet potato, peeled and diced
  • 1 cup brown rice
  • 2 cups kale or spinach
  • 1 apple, sliced thin
  • ¼ cup dried cranberries or cherries
  • ¼ cup feta crumbles
  • ¼ cup slivered almonds
  • ¼ to ½ cup cut protein of choice
  • ½ cup Kosterina Apple Cider Balsamic vinegar
  • ½ cup + 1 tablespoon Kosterina Extra Virgin Olive Oil
  • 3 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh cracked pepper


  • Preheat oven to 400ºF
  • Place sweet potato on a baking sheet and drizzle with 1 tablespoon of oil. Bake for 25 minutes until golden brown.
  • While the sweet potato roasts, cook the rice according to package instructions.
  • To assemble the bowl, lay the spinach on the bottom of the bowl. Portion the rice and spinach on top. Add the sweet potato, feta and almonds.
  • In a mixing bowl, whisk the vinegar with the oil, mustard, honey, salt and pepper.
  • Pour the dressing over the bowl and serve immediately.
