We are celebrating Asian Pacific American Heritage Month with this Korean recipe developed by the grandmother of a Kosterina team member (thank you Grandma (Ajumma))! Perfectly crisped with our Kosterina Organic Everyday EVOO and made just spicy enough, this simple pancake comes together to make so many beautifully complex flavors. Whether you are Korean or not, when you eat this, you will feel right at home. "Kimchi is great for skin, and great for the stomach" - Ajumma. Enjoy!
Ingredients
- ½ pound napa cabbage kimchi, chopped into small pieces, plus 2 tablespoons of the brine
- 3 green onions, chopped
- ½ teaspoon sugar
- ½ cup all-purpose flour
- ½ cup water
- 4 tablespoons Kosterina Organic Everyday EVOO
Directions
- Add Kimchi, green onion, sugar, flour, and water to a large bowl and mix
- Mix well
- Add 2 tbsp Kosterina Organic Everyday EVOO to bottom of a pan and heat on medium
- Pour batter into pan and spread into large circle across bottom of pan
- Cook 3-5 minutes until bottom is browned and crisp
- Carefully flip and add remaining 2 tbsp of Kosterina Organic Everyday EVOO around edges of pan, carefully lifting sides of pancake to allow oil to run across bottom of pan
- Cook 3-5 minutes until bottom is browned and crisp
- Cook both sides again if desired for additional crispiness
