Crunchy, juicy, and completely ready in just under 30 minutes. Crushed almonds mixed with a coating of parmesan cheese is one of our favorite ways to make salmon. We partnered with our friends at Daily Crunch to make an almond crust that is crispy, crunchy and even more delicious. Enjoy this for a quick, elevated dinner!

Ingredients

Salmon:

  • 2 filets salmon
  • ¼ cup Daily Crunch Original Sprouted Almonds, finely chopped
  • 1 tbsp parmesan cheese, grated
  • 3 tbsp Kosterina Garlic Olive Oil
  • 1 tsp honey 
  • 1 tsp dijon mustard
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Parsley, minced, for garnish 

Side salad: 

  • 3 cups arugula
  • ¼ cup Daily Crunch Original Sprouted Almonds, finely chopped
  • ¼ cucumber, thinly sliced
  • 1 tbsp lemon juice
  • 3 tbsp Kosterina Original Extra Virgin Olive Oil

Instructions

    Preheat the oven to 400F and line a baking sheet with parchment paper.

    Add the chopped Daily Crunch Original Sprouted Almonds and parmesan to a small bowl. Mix well and set aside.

    To another small bowl, add the Kosterina Garlic Olive Oil, honey, dijon mustard, and lemon juice and stir to combine.

    Place the salmon filets onto the baking sheet, then drizzle with the olive oil and honey mixture to completely coat the fish. Then, sprinkle the almond and parmesan crust mixture on top until evenly coated.

    Bake for 12-15 minutes until the salmon is cooked through.

    While the fish is cooking, make the salad. To a medium bowl, add the arugula, chopped Daily Crunch Original Sprouted Almonds, and cucumber slices. Drizzle with the lemon juice and Kosterina Original Extra Virgin Olive Oil and toss to coat.

    To serve, plate the salmon with the side salad and season with salt and pepper to taste.
